Soba Noodle Bowls with Peanut Sauce & Veggies!


I always considered Soba Noodle to be something special, the Japanese version of this spaghetti is made from Buckwheat flour (aka Kuttu ke Atta).
Got a pack last week from a local store and was planning to make something simple yet vivid, both in taste and look.
Came across a recipe on the internet where these Jap Noodles are simply tossed in a Peanut sauce with some veggies and served as a Buddha Bowl (a latest Instagram fad!).



Searched all over the city, but couldn't find a readymade Peanut sauce so thought to make it at home. 
Compromised a bit with the actual recipe that was an authentic Thai one with all the ingredients like low sodium tamari, rice vinegar, coconut sugar etc.
I used regular Soy sauce, White wine vinegar, and light brown sugar instead of the above along with creamy Peanut butter, ginger and garlic powder, juice of a lime, and crushed pepper. 
But the sauce came out very thick, so later diluted it with some teaspoon of water and the flavour was perfect so was the texture. 
In salted boiling water, cooked the Soba Noodles until al-Dante and then strain & rinse them with cold water and kept aside.
Thinly sliced Cucumber, Red Bell Pepper, shredded Purple Cabbage, chopped Spring Onion and use Julien cutter to make fine strips of carrot. 
Put the Soba in a bowl, tossed the veggies in with the homemade Peanut sauce and that was it.
